🍋 Homemade Meyer Lemon Caesar Dressing 😋
Today I stopped by Barons to pick up a few ingredients to make my own salad dressing. While I was there, I spotted this Meyer Lemon Vinaigrette and, since I absolutely LOVE Meyer lemons, I couldn't resist bringing it home to experiment with.
Well... let's just say it turned out AMAZING! 🤩
Here's what I used:
🍋 1 cup Best Foods Mayonnaise
🧄 3 to 4 cloves fresh garlic, pressed
🍋 Juice of ½ organic lemon
🥗 About ¼ of the bottle Bella Sun Luci Meyer Lemon Vinaigrette
🐟 A few squeezes of anchovy paste (don't be babies... 😂 you won't even taste it, but it adds incredible depth of flavor!)
🧂 Kosher salt, to taste
⚫ Fresh cracked black pepper, to taste
🫒 4 ounces extra virgin olive oil (this makes it silky smooth and absolutely delicious)
🧀 Optional: Freshly grated Parmigiano Reggiano for an even richer Caesar-style dressing.
Whisk everything together until smooth and creamy.
It makes about a 16-ounce deli container and keeps beautifully in the refrigerator for up to 10 days.
Perfect on Caesar salads, chopped salads, grilled chicken, roasted vegetables, or even as a dip. 🌿
